Antoinette Padula speaking

Take the tomatoes and cook them down. We’d put them through a sieve and we squeezed them through to take out the skin and seeds. Then we’d spread what was left out on a sheet, cover this with cheese cloth. You had boards across porch so the spread of tomatoes was up off the ground. You’d kind of turn that tomatoes once in a while and the sun would dry them. Gradually it would become a thick paste Afterward we’d put them in a crock and cover the conserva with oil so it would preserve. Mama would put a few spoons of that into her sauce. It made her sauce good. She’d use the conserva in different dishes. They did that.
