LIMA SOUP

1 large onion, 1 entire bunch of celery, 5 carrots, 4 med sized potatoes, 1 lb dry lima beans, 1 or 2 sticks of pepperoni, 1 or 2 chicken boulion cubes (Knorr is best). Salt pepper oregano fennel.

Chop the onion and sauté in good amount of olive oil.

Meanwhile in a large pan of water begin adding the rest of the vegetables peeled and chopped. Last add the lima beans. And then the bouilion Add the onions after they are nicely browned. Add, salt to taste, lots of ground black pepper, oregano and fennel is nice.

Meanwhile cut the pepperoni up in about ½ or ¾ inch pieces and simmer in a separate pan of water to get rid of some of the salt. Add to pot after a while. Cook til potatoes and carrots and beans are nicely done.
