GRAMMA BECCE'S PIZZA

28 oz. Can of Peeled Tomatoes (the fat can) - Not already crushed!
1 Small Can (6 oz.) of Tomatoe Paste- Whole Foods brand 365
6-8 Whole Cloves of Garlic - Size Depending
4 Tablespoons of Olive Oil
15-20 Big Basil Leave (do it to taste) 2-3 Teaspoons of Kosher Salt (do it to taste)
Pinch of Black Pepper (do it to taste)

Instructions:
Pulse everything above in food processor until garlic is pretty well minced.
If doing by hand crush tomatoes, break up the basil, put garlic through garlic press (or mince), mix with fork.

Oven set at 450-500 degrees
Cook Time- 15-30 Minutes depending on how oven runs. Or until crust and bottom is browned. Put pizza in on bottom shelf! (close to bottom shelf)

FOR DOUGH:
1.5 Hours let dough stand to rise with some olive oil on it.
Put a small handfull of cornmeal or palenta or grits on bottom of pan before putting the stretched dough on pan.
DO NOT PRESS DOWN ON DOUGH, HANDLE DOUGH AS GINGERLY AS POSSIBLE (STRETCH DOUGH)

MAKE PIZZA: Margarita Pizza
1.Put a generous laddle full of pizza sauce in middle of dough on pan.
2.Spread with hands, and put more accordingly.
3.Grate Parmesian Cheese on top of sauce until nicely covered.
4.Grate fresh Mozzerella or Goat Cheese on top of everything else.
