Mixed together in a food processor: 3 cups walnuts (or hazelnuts, or almonds)—I like walnuts best or sometimes a combo of walnuts and almonds. 1/2 cup turbinado sugar or a little less if you want them less sweet. 3 to 4 egg whites: beat until very stiff, then fold into the stiff egg whites, the crushed nuts and Turbinato sugar. The proportions of nuts to egg whites can be played with to make them lighter or denser. Optional: Not as fluffy this way. all together in food processor until mixed to a texture you like. Bake at 350 till golden, 15 minutes or so depending how your oven runs. I always use parchment paper and let them cool on a cookie rack on the paper and then slide them off after they’ve cooled with a spatula.
