2 cups of washed cracked bulgar wheat
Wash and drain excess moisture. I put it all in a clean dish cloth, squeeze out the extra moisture
Olive oil covering the bottom of the pan generously enough to saute`
4—6 bunches of scallions until slightly browned
Add salt and pepper.
Add washed and drained bulgar stir coating with oil into oily scallions
Add 4 cups of vegetable or chicken stock I like mushroom bouillon for this.
When it has cooled enough
Stir in cut up dried Turkish apricots. About 2/3rds of a lb.
Chopped up 6 hard boiled eggs
Two or more cups of toasted pine nuts.
Stir altogether and add more olive oil and salt to taste.
You can garnish with fresh figs and goat cheese on the top.
