Oatmeal Cookies



Irresitible:

1 cup oatmeal (not quick cooking)

1 1/2 cups granola

1 cup chocolate chips

1 1/2 cups raisins

Toss the above together in a large bowl.



Put into a small bowl the following:

1 2/3 cups sifted flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt


Mix with a wisk  until well blended and then add 1 1/2 cups toasted walnuts (toasted in 375 oven for 10 mins and fully cooled) and toss to coat.



In a cuisinart:

1 cup brown sugar

3/4 cups white sugar

blend the above thoroughly. then with motor running, add

2 sticks butter cut into chunks

when thoroughly smooth, scrape sides of container and add

2 eggs

1 tsp vanilla

blend completely. add the contents of the small bowl with the walnuts and pulse until all is incorporated and walnuts are still chunky. Turn contents of cuisinart into the large bowl with the oatmeal etc and mix well.



Put heaping teaspoons of dough onto baking sheets, 12 cookies to an ungreased sheet, and bake in 375 degree oven with racks in upper and bottom thirds for 12-15 minutes, rotating the cookie sheets half way through. I usually do 14 min.
