3lbs+ of boneless short ribs—good quality
2 medium onions and 3 shallots, diced fine
3 celery ribs and two big carrots, also diced fine
2 fat garlic cloves, sliced
I small can of tomato paste
1.5 cups of good beef broth
1.25 cups of good red wine
Splash of white vinegar
3 sprigs of fresh thyme
2 nice tablespoons of sugar
2 sprigs of fresh parsley
Salt and Pepper
Oil for browning the meat
1. Brown the pieces of meat—generously salted and peppered—on all sides in a little oil. Remove from pan.
2. Into the pan you’ve just used, dump all those good diced veggies. Stir and cook for around five or six minutes.
3 Return the meat to the pan with the veggies and add liquids and all seasonings. Make sure liquids go 1/2 of the way to cover the meat. If not, add more stock and or wine.
4. Cover and simmer for at least three hours.
