Chicken Loaf



2 lbs ground chicken
1—to 1 1/2 large onion, diced and sautéed in butter
½ – 1 cup of bread crumbs, use judgement on this.
3 whole eggs
fresh rosemary or sage—don’t over do it. Put a sprig on top of the loaf once it’s formed too.
milk or cream to mix
Salt and Pepper

1. Blend all well in a big bowl.

2. Shape into a loaf and place in a well-greased roasting pan.

3. Bake at around 375-400 for about 37-40 minutes. But check every fifteen minutes so that the loaf is not dried out and overcooked. It’s done when the surface is slightly browned overall spots.

4. Serve hot or cold.
