Zia’s Spinach Crostini


2 10 oz. packages, chopped spinach, cooked, drained, dried extremely well. Press out the excess water
1 large onion, minced
6 eggs, beaten well
1/2 cup of grated cheddar
1/4 cup grated parmesan
1/3 cup melted butter
3 cups herb seasoned Pepperidge Farm stuffing
1 tbspn garlic salt
1 tbspn pepper
1 tbspn thyme

1 Combine everything in a bowl.

2 Leave in refrigerator, half an hour or so, until firm enough to roll into balls.

3 Set them onto a cookie sheet coated with good olive oil and bake in a 325 350 degree pre‑heated. 30—45 minutes. You want some golden surface—before you take them out.
